1⁄2 cup (125 mL) yellow cornmeal, degermed, enriched
1⁄2 cup (125 mL) all-purpose flour
3 Tbsp (45 mL2 tsp baking powder) Truvía® Cane Sugar Blend
2 tsp (10 mL) baking powder
3⁄4 tsp (3 mL) salt
1 cup (250 mL) sweet corn, thawed if frozen
1⁄4 cup (60 mL) unsalted butter, melted and cooled
1 large egg, beaten**
Directions
- 1.
Preheat oven to 400°F (200°C); Position rack in center of oven.

Spray 8-inch square pan with cooking spray.
- 3.
In a large bowl, whisk together cornmeal, flour, Truvía® Cane Sugar Blend, baking powder and salt.
- 4.
Puree corn in food processor.
- 5.
Add pureed corn, butter and beaten egg to the flour mixture.
- 6.
Stir until blended.
- 7.
Bake until edges begin to pull away from pan sides and tester inserted into center comes out clean, about 15-20 minutes.
- 8.
Cool in pan on rack.
- 9.
Once cool, slice and enjoy. Store unused portion in sealed container.
