Blueberry Jam with Truvía® Cane Sugar Blend

3 cups of washed and stemmed fresh blueberries or 24 oz frozen blueberries
1 box less/no sugar needed fruit pectin
1 1⁄4 cups Truvía® Cane Sugar Blend

Directions

Check jars, lids and bands for proper functioning. Jars with nicks, cracks, even rims or sharp edges may prevent sealing or cause jar breakage. The underside of lids should not have scratches or uneven or incomplete sealing compound as this may prevent sealing. Bands should fit on jars. Wash canning jars, lids and bands in hot, soapy water. Rinse well. Dry bands. Follow manufacturer’s instruction for more details.

Fill a large saucepan or stockpot half-way with water. Bring to a simmer over medium heat.

Add blueberries to blender cup.
- 4.
Pulse until pureed.
- 5.
Transfer prepared fruit into medium saucepot.
- 6.
Stir pectin into fruit.
- 7.
Spray top of fruit with cooking spray to reduce any foaming.
- 8.
Bring mixture to full rolling boil, a boil that doesn't stop bubbling when stirred on high heat, stirring constantly.

Stir in Truvía® Cane Sugar Blend.
- 10.
Return to a full rolling boil and boil exactly 1 minute, stirring constantly.

Remove from heat.
- 12.
Skim off any foam with metal spoon.
- 13.
Ladle immediately into prepared jars, filling to within 1⁄4 inch (.6 cm)

Wipe jar rims and threads. Cover with lids, Screw bands tightly.
- 15.
Lower jars into simmering stock pot. Water must cover top of jars by 1-2 inches (2.5-5 cm). Caution burn hazard: use a Jar Lifter or rack.

After jars cool, check lids for seals. Lids should not flex up and down when center is pressed. Remove bands. Try to lift lids off with your fingertips. If the lid cannot be lifted off, the lid has a good seal. If a lid does not seal, the product can be immediately refrigerated and used.

Label jar with date and name, store in a cool, dry, dark place up to 1 year.

Once opened, store unused portion in refrigerator.
