Blueberry Muffins Recipe

1 cup (240mL) Truvía® Sweet Complete Granulated All-Purpose Sweetener
1 ½ cup (350mL) all-purpose flour
1 Tbsp (15mL) baking powder
1⁄4 tsp (2mL) salt
1⁄3 cup (80mL) canola oil
1 egg**
1 cup (240mL) skim milk
½ tsp (3mL) vanilla extract
¾ cup (180mL) blueberries; fresh or frozen
Directions

Gather all the ingredients; preheat oven to 205°C (400°F).

Combine flour, baking powder, Truvía® Sweet Complete All-Purpose Sweetener, and salt in medium bowl.
- 3.
Combine milk, egg, oil and vanilla in a large bowl. Stir until well mixed.
- 4.
Add dry ingredient mixture to the wet ingredient mixture. Stir until mixed. Do not over mix.
- 5.
Fold in blueberries.
- 6.
Divide batter into paper-lined muffin cups.
- 7.
Bake for 22-25 minutes until tops are lightly browned.
