Caprese Balsamic Chicken Recipe with Truvía® Brown Sugar Blend

2 lbs. boneless skinless chicken breasts (about 6 pieces)
1⁄2 tsp (2.5 mL) salt
1⁄4 tsp (2.5 mL) black pepper
1 Tbsp (15 mL) olive oil
2 cloves minced garlic
3⁄4 cup (177 mL) reduced-sodium chicken broth
1⁄2 cup (125 mL) balsamic vinegar
2 Tbsp (30 mL) Truvía® Brown Sugar Blend
1 Tbsp (15 mL) Dijon mustard
1 large ripe tomato, cut into 6 slices
6 slices (1 oz. each) mozzarella cheese
6 large fresh basil leaves
Directions

Pound chicken breasts to ½" thick between sheets of plastic wrap or waxed paper. Salt and pepper both sides.
- 2.
Heat oil in 10 or 12-inch skillet on medium-high. Brown chicken on both sides. Add garlic; saute’ until browned, about 2 to 3 minutes.

Stir in broth, balsamic vinegar, Truvía® Brown Sugar Blend and mustard. Simmer for 10-12 minutes, covered, until chicken is cooked through.

While still in skillet, top each chicken breast with 1 basil leaf, then cover with slice of mozzarella cheese. Top each breast with tomato slice. Serve with sauce from the pan drizzled on top.
