Caramel Cheesecake Bites

These caramel cheesecake bites taste truly decadent. Created by Baking Star contest judge April Athena of CookWithApril, these bars have 14% fewer calories and 38% less sugar* per serving than the regular sugar-sweetened version. Makes 24 pieces (approximately 2-inch squares)

Ingredients

  • 2 cups (500 mL) graham cracker crumbs

  • 1 Tbsp (15 mL) Truvía® Cane Sugar Blend

  • 14 cup (60 mL) + 2 Tbsp (30 mL) butter, melted

  • 4 (8 ounce) packages reduced fat cream cheese, softened

  • 34 cup (180 mL) Truvia® Sweet Complete® Brown Sweetener

  • 2 Tbsp (30 mL) flour

  • 12 cup (125 mL) light sour cream

  • 1 Tbsp (15 mL) vanilla extract

  • 3 eggs

  • 12 bag (about 227g) caramels, unwrapped

  • 2 Tbsp (30 mL) water, divided

  • 12 cup (125 mL) finely chopped walnuts

Directions

  • 1.

    Preheat oven to 350°F (175°C). Combine graham cracker crumbs, Truvía® Cane Sugar Blend, and melted butter in a medium bowl. Press crumb mixture firmly into a foiled 9” x 13” pan. Bake crust at 350°F (175°C) for 10 minutes.

  • 2.

    In a separate bowl, combine softened cream cheese, Truvia® Sweet Complete® Brown Sweetener, and flour with a hand mixer. Next, add sour cream and vanilla extract and continue mixing. Finally, mix in eggs.

  • 3.

    Heat caramels and water in microwave for 30 seconds until melted. Pour about 34 of the caramel sauce into cheesecake batter and mix. Pour batter onto crust.

  • 4.

    Bake at 350°F (175°C) for 40 minutes.

  • 5.

    Cut cooled bars into 24 (approximately 2” square) bites. Store refrigerated.

  • 6.

    Top bites with chopped walnuts and drizzle with remaining caramel sauce before serving.
