Cinnamon Rolls

Dough
3 3⁄4 cup (900mL) unbleached all-purpose flour that contains malted barley flour
1⁄4 cup (60mL) Truvía Sweet Complete Granulated All-Purpose Sweetener
1 tsp (5mL) salt
2 packets (4 ½ tsp or 20mL) of fast acting instant yeast
1 cup (240mL) warm whole milk
1 egg*
1⁄4 cup (60mL) melted unsalted butter
Filling
1⁄4 cup (60mL) of butter (unsalted)
1 Tbsp (15mL) ground cinnamon
1⁄2 cup (120mL) Truvía Sweet Complete Granulated All-Purpose Sweetener
Icing
2 oz (60mL) cream cheese
1⁄3 cup (80mL) Truvia Sweet Complete Icing Sweetener
1⁄2 tsp (3mL) pure vanilla extract
2 Tbsp (30mL) unsalted butter, melted
Directions
- 1.
First, make an at home proofer (this keeps the dough warm and humid). To do this, preheat the oven to 95°C (200°F) with a pan of water in the bottom. Let cook for 5 minutes than turn off the oven.
- 2.
Grease 33x23cm (13x9 inches) backing dish, set aside.
- 3.
In a mixing bowl combine, 3 cups (720mL) of flour, Truvía Sweet Complete Granulated Sweetener, salt and yeast. Mix on low for 1-2 minutes.
- 4.
In a microwave safe bowl, warm milk and butter in the microwave for 30-40 seconds or until warm (50°C).
- 5.
Pour ½ of the liquid into dry ingredients in the mixing bowl, mix on low.
- 6.
Mix in the egg. Add the remaining liquid to the mixture and mix on low until moist.
- 7.
Mix on medium speed 3 minutes.
- 8.
Turn speed to low and add ¼ cup (60mL) of flour. Mix until combined.
- 9.
Scrape out dough and place on a surface floured with ½ cup (120mL) of flour.
- 10.
Knead dough for 8-10 minutes or until all the flour is combined in dough.
- 11.
Place kneaded dough in a grease bowl and let rest for 10 minutes. This is important to let the yeast hydrate.
- 12.
Make filling while dough is resting. In a mixing bowl, combine cinnamon and Truvía Sweet Complete Granulated Sweetener. Set aside.
- 13.
After resting the dough for 10 minutes, roll out the dough on a lightly flour surface until you get a rectangle that is roughly 35x20cm1(4x8 inches), flipping dough over several times. Use your hands and a ruler to shape the dough into the nice rectangle.
- 14.
Spread the butter evenly over the entire rectangle.
- 15.
Sprinkle on cinnamon mixture over entire rectangle.
- 16.
Now roll up the dough tightly to make a 35cm (14 inches) log.
- 17.
Cut into 14 pieces and arrange in the greased pan.
- 18.
Cover with plastic wrap and place in homemade proofer for 60-90 minutes, or until the cinnamon rolls double in size.
- 19.
Remove rolls from oven and preheat oven to 190°C (375F).
- 20.
Bake for 18-20 minutes or until crust is golden on edges.
- 21.
Cool on wire rack.
- 22.
In a small bowl whisk together the cream cheese, Truvia Sweet Complete Icing Sweetener, vanilla extract and butter.
- 23.
Spread on top of cooled rolls. (or place into sandwich bag, cut corner and drizzle the icing onto the cinnamon rolls).
- 24.
Store in a sealed container to keep tender.
Options (Will Affect Nutritional Information)
It is important to use the malted barley flour as there is no food for the yeast in the Truvia Sweet Complete Granulated All-Purpose Sweetener. If you use traditional flour you will need add more time to the proof.
For the fresh out of the oven experience reheat the roll in the microwave for 15 second.
Sprinkle ¼ cup (60mL) raisins over filling before rolling up dough.
