Pastry for single-crust 9-inch pie
1 large lemon, grated zest and juice
1 orange, grated zest and juice
1 lime, grated zest and juice
2⁄3 cup (150 mL) fat free evaporated skim milk
1⁄8 tsp (.625 mL) salt
2 tsp (10 mL) cornstarch
2 egg yolks
2 whole eggs
3 Tbsp (45 mL) + 1 tsp (5 mL) Truvía® calorie-free sweetener spoonable*
1 tsp (5 mL) of citrus zest medley
Optional : Light whipped topping
Directions
- 1.
Preheat oven to 400° F (200° C).
- 2.
Bake pie crust according to directions approximately 10–12 minutes. Cool on rack.
- 3.
Reduce oven temperature to 325° F (160° C).
- 4.
Grate zest of lemon, orange and lime and combine.
- 5.
Squeeze the juice of each of the fruits. Combine the juices and measure 2⁄3 cup.
- 6.
In a small bowl, combine milk, salt and cornstarch; stir.
- 7.
In a medium bowl, whisk together the egg yolks, whole eggs, Truvía® calorie-free sweetener and 1 tsp of zest medley.
- 8.
Add milk mixture; whisk to blend.
- 9.
Add juice mixture; whisk to blend.
- 10.
Pour into cooled crust.
- 11.
Bake for 25 minutes just until set. Cool on wire rack.
- 12.
Refrigerate before serving. Top with light whipped topping if desired
