2 cups (475mL) all-purpose flour
1⁄3 cup (80mL) unsweetened baking cocoa
¼ tsp (1mL) salt
1⁄4 tsp (1mL) baking soda
3⁄4 cup (180mL) unsalted butter, melted
1 cup (240mL) Truvía Sweet Complete Granulated Sweetener
2 tsp (10mL) vanilla extract
1 egg **
¼ cup (60mL) water
3⁄4 cup (180mL) semisweet chocolate chips
Directions
- 1.
Heat your oven to 175C (350F).
- 2.
In medium bowl, sieve flour, cocoa, salt and baking soda; set aside.
- 3.
In large bowl, use a spoon or spatula to stir together melted butter, Truvía Sweet Complete Granulated Sweetener, vanilla extract, egg and water.
- 4.
Stir dry flour mixture into the wet mixture one cup at a time, beat with mixer on low for a few minutes.
- 5.
Once dough is well mixed, stir in chocolate chips.
- 6.
Drop dough by rounded tablespoons on ungreased, parchment lined cookie sheet.
- 7.
Press down to flatten. (Use the bottom of a glass to make 2” circles).
- 8.
Bake 10 minutes.
- 9.
Cool for 2 minutes on cookie sheet.
- 10.
Transfer to rack and cool completely, about 15 minutes.
- 11.
Store in a sealed container.
Options (Will Affect Nutritional Information)
- Try using white chocolate chip instead of semisweet chips.
- Add ¼ cup (60mL) pecans or walnuts.
- Add 1 tsp (5mL) of rum extract or 1 tsp (5mL) ground chili pepper to spice it up.
- Try using a gluten free flour but add 1⁄4 tsp (1mL) more baking soda.
