Crust
1⁄2 cup (120mL) almond flour
1⁄2 cup (120mL) coconut flour
1⁄3 cup (80mL) Truvia Sweet Complete Icing Sweetener
½ tsp (3mL) salt
5 Tbsp (15mL) unsalted butter
1 tsp (5mL) lemon finely grated lemon peel
1 large egg- separated**
Filling
3 large eggs**
2 cups (475mL) Truvia Sweet Complete Icing Sweetener
1 Tbsp cornstarch
11⁄2 tsp finely grated lemon peel
1⁄2 cup fresh lemon juice
Directions

Heat oven to 175° C (350° F).
For Crust

Combine all ingredients, except the egg white, in a medium bowl with a mixer. Mix on low for 1 minute, then mix on medium speed for 1 minute. You should see small lumps in the mixture.

Press into even layer in bottom and up the sides of 8-inch square baking pan.
- 4.
Spread egg white over pressed crust rotating pan to get edges.

Bake 25-30 minutes. Cool completely on wire rack.
For Filling

Whisk eggs until blended.
- 7.
Whisk in Truvia Sweet Complete Icing Sweetener, cornstarch and lime peel until blended.

Whisk in lemon juice.
- 9.
Pour carefully over cool crust make sure not to go over side crust.
- 10.
Bake at 175° C (350° F) for 25 minutes or until set in center.
- 11.
Cool completely on wire rack.
- 12.
Refrigerate leftovers.
