Nanaimo Bars with Truvía® Calorie-Free Sweetener
TruviaFrom its origin in Nanaimo, British Columbia, this traditional bar is rich and filling. This recipe, made with Truvía® calorie-free sweetener, has 20% fewer calories* and 55% less sugar* than the full-sugar version. Makes 25 bars.

Bottom Layer
1⁄2 cup (125 mL) unsalted butter
1 Tbsp (15 mL) Truvía® calorie-free sweetener spoonable*
1⁄3 cup (75 mL) unsweetened cocoa powder
1 egg, pasteurized
1 tsp (5 mL) vanilla extract
2 cups (500 mL) graham cracker crumbs
1 cup (250 mL) unsweetened shredded coconut
1⁄2 cup (125 mL) chopped walnuts
Filling
1⁄2 cup (125 mL) Truvía® calorie-free sweetener spoonable**
1 tsp (5 mL) corn starch
1⁄3 cup (50 mL) unsalted butter, room temperature
1⁄2 cup (125 mL) powdered sugar
2 Tbsp (30 mL) skim milk
2 Tbsp (30 mL) vanilla custard powder or vanilla pudding mix
1 tsp (5 mL) vanilla extract
Topping
4 ounces semisweet chocolate
1 Tbsp (15 mL) unsalted butter
Directions
BOTTOM LAYER
- 1.
In a saucepan over low heat, melt the butter.
- 2.
Remove from heat and stir in the Truvía® calorie-free sweetener and cocoa powder. Whisk in the beaten egg. Return the saucepan to low heat stirring constantly until the mixture thickens (1 - 2 minutes).
- 3.
Remove from heat and stir in the vanilla, graham cracker crumbs, coconut, and walnuts.
- 4.
Press the mixture into a greased 9” square pan. Cover and refrigerate until firm (about an hour).
FILLING
- 5.
In a coffee or spice grinder, mix the Truvía® calorie-free sweetener and corn starch until it resembles powdered sugar.
- 6.
In a separate bowl, beat the butter until smooth. Add the rest of the ingredients, including the powdered Truvía® sweetener and beat until the mixture is smooth. If the mixture is too thick to spread, add a little more milk.
- 7.
Spread the filling over the bottom layer, cover, and refrigerate until firm (about 30 minutes).
TOPPING
- 8.
Chop the chocolate into small pieces. Over low heat, melt the chocolate and butter.
- 9.
Spread over the filling and refrigerate for at least 10 minutes to allow the topping to harden.
*This bar has 160 calories and 7 grams of sugar per serving as compared to 200 calories and 16 grams of sugar per serving in the full-sugar version.
