4 cups (1 L) (about 8 medium) ripe peaches, peeled, pitted and sliced
1 Tbsp (15 mL) lemon juice
1⁄2 cup (125 mL) Truvía® calorie-free sweetener spoonable*
3 Tbsp (45 mL) cornstarch
1⁄2 tsp (2.5 mL) salt
1⁄2 tsp (2.5 mL) cinnamon
2 Tbsp (30 mL) butter
1 package unbaked refrigerated pie crust (14-oz. package with two round crusts)
1 Tbsp (15 mL) milk
1 tsp (5 mL) sugar
Directions
- 1.
Preheat oven to 425° F (220° C). Remove crusts from refrigerator and warm to room temperature.
- 2.
Stir peaches, lemon juice, Truvía® calorie-free sweetener, cornstarch, salt and cinnamon together in medium bowl.
- 3.
Unfold each round crust on work surface, and cut into four quarters. Spoon 1⁄4 cup of fruit filling into center of each crust quarter and add a small dot of butter. Fold each dough quarter over the filling to form a triangle and press edges together with a fork to seal.
- 4.
Transfer the hand pies to an ungreased cookie sheet. Brush with milk and sprinkle lightly with a pinch of sugar. Cut a 1-inch slit or small design in the top of each pie to allow steam to escape during baking.
- 5.
Bake pies for 15–20 minutes until crust is golden brown and filling is bubbly. Cool pies in the pans on wire racks.
