Truvia Peppermint Syrup (yields ~2 cups / 16 servings)
2 cups (475 ml) water
1⁄2 cup (120 ml) Truvia® Calorie-Free Sweetener
¼ cup (60 ml) fresh mint
1 tsp (5 ml) peppermint extract
Peppermint Mocha Latte (12oz / 360ml)
1 cup (240 ml) skim milk
3 Tbsp. (45 ml) Cocoa powder
1 Tbsp. (15 ml) Truvia® Calorie-Free Sweetener
½ cup (120 ml) strong coffee
2 Tbsp. (30 ml) Truvia Peppermint syrup (see above)
Directions
Peppermint Syrup
- 1.
Wash and chop fresh mint leaves. Set aside.
- 2.
Add water and Truvía® Original Calorie-Free Sweetener into medium saucepan.
- 3.
Bring to a boil, stirring occasionally to prevent burning.
- 4.
Reduce heat to low, add mint leaves and allow to simmer for 4-5 minutes.
- 5.
Remove from heat and add peppermint extract.
- 6.
Strain into a clean sealable jar/bottle for future use, store in the refrigerator.
Peppermint Mocha Latte
- 7.
Add milk, cocoa and Truvía Calorie-Free Sweetener into medium saucepan.
- 8.
Bring to a boil, stirring occasionally to prevent burning.
- 9.
Remove from heat and set aside.
- 10.
In a large mug (must hold a least 12 oz or 350 ml) add ½ cup strong coffee (120 ml), 2 T peppermint syrup (15 ml) and all of the milk cocoa mixture from above.
Optional (Will Effect Nutritional Information)
When using peppermint syrup after storage, if in crystal form, heat 30-60 seconds in the microwave before use.
Use dark cocoa for a richer flavour.
Add more peppermint syrup to punch up the peppermint flavour.
Use non-dairy milk, like almond or oat milk.
Top with whipped cream made with Truvia instead of sugar.
1 cup (240 ml) heavy whipping cream
1/4c (60 ml) Truvia® Original Calorie-Free Sweetener
- 1 tsp (5 ml) pure vanilla extract or vanilla beans
- Whip cream until soft peaks form. Add Truvia and vanilla.
Add peppermint cane or crush peppermint candies for topping/stir stick
