6 cups cubed sweet potatoes
1⁄2 cup Truvía® Cane Sugar Blend
1⁄2 tea salt
1 tea vanilla
2 eggs
1⁄4 cup butter
Topping
1⁄2 cup Truvía® Brown Sugar Blend
1⁄3 cup flour
1⁄2 cup chopped pecans
1⁄8 cup melted butter
Directions
- 1.
Preheat oven to 350º F and spray a 9x13 baking dish with cooking spray.

Bring 2 quarts of water to a boil in a large pot over medium heat.

Once the water is boiling, add sweet potatoes cubes and cover.
- 4.
Allow the potatoes to boil until tender, about 30 minutes.

Whisk eggs in a small bowl, than gradually add to mashed sweet potatoes.

Sprinkle the topping evenly over the top on the sweet potato mixture to make a nice crust.
