1 cup (250 mL) Truvía® Cane Sugar Blend
3 cups (750 mL) cake flour
2 Tbsp (30 mL) baking powder
1⁄2 tsp baking soda
1⁄2 cup (125 mL) butter, softened (1 stick)
1⁄2 cup (125 mL) canola oil
3 eggs
11⁄2 (375 mL) cup skim milk
2 tsp (10 mL) vanilla extract

Preheat oven to 350° F (180° C). Grease and lightly flour 2 nine-inch pans or a 9" x 13" pan.

Combine dry ingredients in large bowl and mix.
- 3.
Add butter and oil and mix on medium speed for 1–2 minutes.
- 4.
Blend eggs, milk and vanilla in a small bowl. Add 1⁄2 of egg mixture to flour mixture. Mix for 30 seconds at low speed and 1 minute at medium speed. Scrape bowl and repeat with rest of egg mixture until well blended.
- 5.
Bake 9" pans for 32–36 minutes (slightly longer for 9" x 13" pan) just to the point when a toothpick comes out clean.
- 6.
Cool for at least 15 minutes before removing from pan.
- 7.
Add frosting or topping if desired.
